Homemade Granola


4 cups rolled oats

1 cup chopped almonds

1/2 cup craisins

1 cup shredded unsweetened coconut

1 tablespoon cinnamon

1/4 teaspoon salt

1/4 cup coconut oil

1/3 cup honey

1/4 teaspoon almond extract

1/4 teaspoon vanilla extract

  • preheat oven to 350 degrees
  • combine all dry ingredients
  • melt coconut oil and add to dry ingredients
  • warm honey ( for easier mixing) and add to mixture
  • add almond and vanilla extracts
  • spread on 2 baking sheets lined with parchment paper
  • bake for 15-20 minutes or until golden brown

Tip- If you prefer granola to be in chunks do not stir while baking.
